Vegan Plum cake

Does this remind you of Christmas!! it does for me. This is an age old recipe i acquired from the book my mother had preserved for years where the pages have turned yellow and the binding completely worn but not the memories of those cakes which i had drooled upon in the bakery during Christmas season. I have made some changes to the recipe replacing the oil for butter. You will not feel the difference.I wanted to bake vegan for most of the part while still learning.I sure did try almond milk instead of dairy milk and cant tell how healthy i felt.


Ingredients:

  • self rising flour _ 1 cups
  • sugar – 1/3 cup
  • Milk/Almond milk - 1 cup
  • sunflower oil - 1/2 cup
  • vanilla essence 1 tsp
  • Dried plum – 15 nos or ¾ cup
  • cashews – 1/4 cups
  • tutti frutti – ¼ cip

Directions

  1. preheat the overn to 350 degrees
  2. Break the cashews into small pieces and set aside.
  3. If you get tutti frutti in Indian stores use them or get the maraschino cherries in the grocery store in the baking aisle and drain them and cut into small pieces.
  4. Sieve the flour and set aside
  5. Grind the plums with ¼ cup of milk in the food processor if they are soft. If they too dry I recommend to soak them in hot milk over night or minimum of 6 hours
  6. Mix the ground plum with sugar until it dissolves. Add the rest of the milk
  7. Add the sunflower oil to the mix and whip well. Add the vanilla essence too
  8. Slowly add the flour incrementing by ¼ cup and mix without forming lumps.
  9. After adding the flour, add the broken cashews and cherries/tutti frutti and mix them gently.
  10. Grease a 8 inch pan and fill the cake mix and bake for 30 minutes or until skewer comes out clean in the middle depending upon the oven range type
  11. Enjoy your plum came with cool whip or ice cr
