Spicy Tomato and Dill quinoa
Quinoa – one cup cooked
Tomatoes – 2 medium
Dill – 2 tbsp
Cumin seeds – one tsp
Turmeric – one tsp
Whole red chillies – 4
Chilly powder – one tsp
Cashews – broken 2 tbsp
Olive oil – 2 tbsp
Ghee – 2 tbsp
Salt to taste
Directions:
Cook the quinoa and keep separately.
Dice tomatoes nicely and chop Dill finely.
Place a sauce pan on the stove, add the olive oil when it is hot add the red chillies, cumin seeds and cashews and fry until golden brown.
Add the tomatoes and saute will it softens with turmeric.
Add the dill and sauté for about 2 minutes.
Add the cooked quinoa and mix well and switch off the stove.
Drizzle the ghee on top before serving.
Serve with the Tzatziki sauce or raita.
Variations: to make it less spicy leave the chilly powder and reduce the red chillies to 2.
