Cottage cheese in spinach gravy(palak paneer)
Ingredients:
Spinach- one 9 0z bag
Tomatoes - 2 medium size
Ginger- grated 1 tsp
Cumin seeds one tbsp
Chilly powder - one tsp
Turmeric powder - one tsp
Garam masala - one tsp
Coriander powder - one tsp
Jaggery - one tsp
salt - 1 1/2 tsp
Cubed paneer - one cup
Oil - 1 tbsp
Method:
Wash and cut spinach and cook in one cup water. Let it cool. Strain the excess water and save for later.
Fry the paneer cubes in oil and save for later.
Place pan on the stove, pour oil when oil is hot add the cumin and hing and grated ginger. Let the ginger turn brown add the finely chopped tomatoes. Add turmeric and close the pan with a lid.
let it cook for 3-4 minutes. Switch off the stove. Let it cool.
Add the tomatoes and the boiled spinach in the food processor and grind into a paste.
Now bring the paste back to the stove add the saved water from spinach. Add the chilly powder, cumin powder, coriander powder, garam masala and jaggery.
Add the fried paneer to the gravy. Serve hot with rice or roti.
