Veggie Burrito













Born in India especially in south, burritos are definitely not our traditional food. But moving to the US a decade ago and an avid mind to try different cuisines introduced me into the mexican delicacy. Well one of our friend who visited Mexico came back disappointed saying they dont have burritos there..hmm..so it is another mexican American dish then.
Being vegetarian with a high need of fast food on the go with basket ball practices and dance classes for my child in between made me venture into other options without compromising my vegetarian virtue. Soon drifting into the mode of goodness path realising the contamination in the outside food created the requisite to learn to cook which were relished by the children. THis recipe has captured the heart of many children who visit our home for sleep overs or birthday parties or picnics. They say its "OMG..SO GOOD!! "MS. guruswami..this is better than what we eat at the store.." thanks to those kids who motivated me to keep cooking and gave the courage to put that on a blog.

Ingredients:
Tortillas - 4
Vegetarian refriend beans( can be store brought or have to be soaked pressure cooked and mashed)
shredded lettuce - one cup
mexican cheese one cup
sour cream - 4 tbsp
tomatoes finely chopped - 1/2 cup
avacado - 2 (cut into long slices)
Tomato sauce - 4 tbsp
Rice cooked 1/2 cup
olive oil 2 tbsp
Red and green peppers sliced lengthwise - 1 cup
crushed red pepper - 2 tsp
salt to taste

Method.
Saute the bell peppers in the olive oil and keep aside.
Empty the beans and sauter them with olive oil and keep aside.
Place a griddle/tava on the stove. Warm the tortilla on the griddle. while on the griddle sprinkle the cheese which melts on the heat. Dont let the tortilla crisp.
remove from the stove. Now spread one tbsp of beans on the cheese, spread the lettuce, tomatoes, avacado, rice, peppers, sour cream, sauce, salt, crushed pepper.
Fold the bottom half and hold, then close the sides which looks like a open purse or envelope. tightly close the top portion and roll and serve.
Variations: you can spice up the rice with some mint paste and lemon juice for more flavor.
some kids dont like refried beans you can go for black beans or soy beans for healthy options.
If you are vegan you can replace sour cream with coconut cream.
You can leave out bell peppers if not liked.
enjoy your burrito.
