First time heard about it I wondered how can you make cake out of carrots. Impossible!! I thought. But it changed instantly after indulging in with the first scoop in my mouth and never put the fork down until I wiped the plate clean. Hmm!!.why not if we can make carrot halwa and carrot kheer why not cake. thats right. Reality hit me when I realized that I may actually have to give it up cuz you dont find without eggs anywhere closer to home. The closest vegan bakery is 35 miles.So started trying out recipes online but too complicated and needed a lot of shopping from natural food stores. How can i make it simple with ingredients lying around the house without spending too much. Voila!! here it is. I have options for vegans and lactarians.Replace the milk with soy milk and butter with margarine. You will get the same results.
Self rising flour– 3 cups
Cinnamon – 2 tsp
Nutmeg – ½ tsp
Canola oil – ¾ cup
Sugar – 1 cup
Salt – one tsp
Brown sugar – 1 cup
Milk (soy for vegans)– ½ cup
Vanilla essence – 1 tsp
Water – ½ cup
Grated carrots – 2 ½ cup
Walnuts – 1 3/3 cup
Raisins – ½ cup
For icing:
Confectioners sugar ; 2 ¾ cup
Margarine or butter – 2 ½ stick (one stick – 8 tbsp)
Vanilla – 1 tsp
Milk- ¼ cup
Preheat over 350 degrees. Grease 2 pans 2 9-inch pans
Sift flour, cinnamon, nutmeg ans salt.
Mix oil, sugar, brown sugar, milk,vanilla and water.
Mix wet and dry ingredients together.
Stir in carrots and walnuts and raisins.
Bake for 30 mins or until the tooth pick comes out clean.
Cool it for about 2 hours.
Place the first 9 inch on the cake board and apply 1/3rd of the icing.
Place the second cake and align correctly with the base. use rest of the icing and cover well without showing the crust.
Use some finely chopped walnuts and studd them on the icing.
