Tofu and veggies stir fry

Stir fries with lots of veggies with tofu is irresistible. This kind of chinese stir fry kind can be had with both Brown rice and flat rice noodles. I pick the non soggy kind of vegetables for a crispy taste. The Tofu slab can be either shallow fried or baked for healthier choice.

Ingredients

  • Firm tofu: 4-6 3 inch long slabs
  • Veggies: Peppers(green,red,orange,yellow), Broccoli florets, snow peas,zuchini: cut lengthwise: 4 cups
  • Sesame seeds: one tbsp
  • Ginger: grated one tsp
  • Chilly powder: one tsp
  • Salt: 1/2 tsp
  • Olive oilL 2 tbsp
  • Brown sugar: one tsp

Method

  1. Cut the tofu into 3 inch long slabs and soak the water out of it with a kitchen towel/paper towel. Fry in little oil or bake them with oil brushed in it.
  2. Place a wok on the stove add the oil and then grated ginger and sesame seeds
  3. Add the veggies and stir them on high heat until its little tender but still cripsy
  4. Add the salt and chilly powder to the fry
  5. Add the sauce, brown sugar and fry until it is absorbed.
  6. Sprinkle the crushed peanuts while serving.
  7. Serve the veggies,tofu with hot steaming rice or noodles immediately
