Macaroni and vegetable soup

This is a healthy soup made a bit interesting with adding some macaroni to make kids eat. Today i made this for my loved ones who came back after some accomplishments. The cold weather outside was perfect for a hot and healthy soup but filling enough to not make you hungry. I have made with available veggies at home but you can add any available vegetables according to your preference. One thing to remember is that if zuchini is bitter it would screw up the whole soup so i try to add it a the end after sauteing rather than adding to the stock.



Ingredients:

  • Cabbage shredded- 2 cups
  • Zuchini - 1/2 cup
  • Broccoli florets - one cup
  • Cooked macaroni - one cup
  • Carrots - big cubes one cup & small diced 1/2 cup
  • celery cubed - one cup
  • tomatoes - 1/2 cup
  • Black beans soaked and cooked or canned - 1/2 cup
  • Italian seasoning - 1/2
  • salt - one tbsp
  • water - 8 cups

Directions:

  1. Place a big pot on the stove and add the the cabbage, big cubes of carrot, celery etc
  2. let it come to a rolling boil then set the flame to medium to low cover the pot and let it stay on the stove for about 30-45 minutes.
  3. drain the stock and keep aside
  4. mean while place a pan on the stove add the olive oil, italian seasoning and black pepper.
  5. add the small diced carrots, broccoli, zuchini,frozen corn and saute for 5 minutes
  6. add the stock and let it boil for 5 minutes
  7. add the beans, italian seasoning salt and one tsp sugar
  8. add the cooked macaroni and let it boil for a minute
  9. your soup is ready
