House salad with Walnut dressing
Ingredients for salad:
- Green leaf Lettuce - 3 big leaves
- Carrots - 2 medium sized
- Olives - 4-5 pitted pearls
- Cucumber - One medium
- Red radish - 2-3 small ones
- Red Peppers - One small
- Dates - 3-4 pitted
- silvered almonds - 2 tbsp
Ingredients for dressing:
- Shelled unroasted walnuts - 1/2 cup
- Sour cream - 1/2 cup
- Lime juice - one tbsp
- salt - one tsp
- Italian seasoning - one tsp
- sugar - 1/2 tsp
- olive oil - one tbsp
Directions
- Wash all the vegetables thoroughly. Tear the lettuce into small pieces with hads. Peel the carrots and julienne cut or shred.
- Peel and cut cucumber into cubes. Cut olives into rings. Dice red peppers and add to the salad.
- Add the silvered almonds and minced dates and add.
- Keep the salad aside.
- Add the walnuts into a food processor and powder them nicely.
- Add the sour cream, olive oil, lemon juice, italian seasoning, salt pepper, sugar and blend again.
- Empty the contents and keep in a bowl
- Mix the dressing with salad only before serving to retain the crispness of the salad. Adding too early will make the salad run watery and soggy.
